Easy Pasta Salad

Serves: 4

Nutritional Information Per Serving: Calories: 250; Fat: 9g; Carbohydrates: 22g; Sodium: 184mg; Fiber: 2g (5g if you use whole wheat pasta)

Ingredients:

2 T. Gourmet mustard

2 T. lemon juice

1 T. minced garlic

2 T. olive oil

1 c. pasta, bite-sized in any shape, cooked according to package directions

1 c. fresh broccoli, chopped in bite-size pieces

1 c. chicken breast, cooked, chopped in bite-size pieces

2 T. Parmesan cheese (fresh grated is best, however, low-fat version works well too)

4 black olives, sliced thinly (optional)

1 c. red bell pepper, chopped (optional)

Preparation: Combine mustard, lemon juice, garlic and olive oil in a small bowl. Heat in microwave oven for about 1 minute. Add this mixture to cooked, drained pasta along with broccoli, chicken, cheese, olives and bell pepper, stirring to blend ingredients well. Serve at room temperature with fresh fruit or rolls.
