These following recipe is easy to make, and take less than an hour from start to finish. This quick and fresh vegetable soup serves 12.
- 2/3 cup sliced carrots
- ½ cup diced onion
- 2 minced garlic cloves
- 3 cups vegetable broth (can substitute chicken broth)
- 1 ½ cup diced cabbage (coleslaw mix is fine)
- 1/2 cup green beans
- 1 tbsp. tomato paste
- ½ tsp. dried basil
- ¼ tsp. dried oregano
- ¼ tsp. salt
- ½ cup diced zucchini
Use butter spray in soup pot (or small amount of olive oil), then add in cut carrots, onion, garlic, green beans, cabbage. Saute five to six minutes. Add all the other ingredients, finishing with the zucchini. Cook together on medium heat for two to three minutes. Turn down heat to simmer – simmer 15 minutes.
