Frozen Tiramisu Recipe

Tiramisu is a popular Italian dessert, originally made with mascarpone cheese filling laced with espresso sauce and chocolate. This frozen version uses low-fat ice cream in place of cheese and angel food cake. While the ice cream may not match the creaminess of the mascarpone filling, it is cool, rich and delicious.  Try this healthier version of tiramisu for a get-together or as a take-along.

Syrup Ingredients:

1/2 c. strong coffee, brewed

1/4 c. brown sugar

2 T. corn syrup

1/4 c. + 1 Tbsp. chocolate chips or 1 1/4 sqaures Baker’s semi-sweet chocolate

2 Tbsp. Bourbon or rum

 

Filling Ingredients:

1 1/2 qt. mocha, coffee-flavored or vanilla, reduced-fat ice cream

1 pint low-fat or fat-free whipped topping

 

Crust:

About 1/2 of a small package angel food cake, cut into thin slices

 

Preparation:

Stir coffee, brown sugar and corn syrup together in a deep bowl. bring this mixture to a boil for 8-10 minutes or until the mixture is the consistency of syrup. Remove from heat and add chips or 1 square  semi-sweet chocolate, stirring to melt. If chocolate does not melt, heat for 1 minute. Stir bourbon or rum into mixture. Set aside to cool. Soften ice cream by setting at room temperature for a few minutes. Line a 9-inch pie plate with thin slices of angel food cake. Drizzle 2 tablespoons of syrup half of ice cream and whipped topping layered over angel food crust. Repeat layers of syrup, remaining ice cream and whipped topping. Finish with syrup. Chop remaining chocolate  semi-sweet chocolate and sprinkle over topping. Freeze until firm.
