Heart Healthy Monday: Ginger-Glazed Green Beans with Shrimp

Serves 4


  • 2 T. olive oil
  • 1 T. minced garlic
  • 1 T. or less minced ginger
  • 2 T. sesame seed
  • 3-4 c. fresh green beans, trimmed
  • 1/4 c. sweet Thai chili sauce
  • 1 c. (8 oz.) frozen, boiled shrimp


Heat oil in a large skillet over medium heat. Add garlic, ginger and sesame seed, stirring to blend. Add beans, stirring the mixture to coat beans. Saute for 8-10 minutes or until beans are slightly tender. Add shrimp with chili sauce; continue to saute until shrimp are warm. Serve with Chinese noodles.


Use less ginger when you want the dish to be mild; ginger creates a sharp flavor. There are a number of chili sauces available; be sure to select one from the Asian section of your grocery store or specialty store.


Toss in a few cashews, if available, for a great flavor and texture addition.
