Make a stop at your local farmer’s market and pick up some fresh tomatoes for this summer sauce!
- 3 large ripe tomatoes, diced
- 1 green onion, finely chopped
- 1 T. minced garlic
- 1 T. fresh basil, minced
- 1/2 tsp. salt
- 1 T. olive oil
- Freshly ground pepper to taste
Combine tomatoes, onion, garlic, basil, salt, olive oil and pepper, stirring to coat tomatoes with mixture. Allow to sit at room temperature for at least 1 hour. Cook pasta according to package directions. Drain pasta, shake dry and toss in a large bowl with tomato mixture. Top with Parmesan cheese. Serve immediately.
Note: Nothing is savored more than fresh, ripe tomatoes from the garden. This delicate blend of seasonings complements the fresh flavor. Added to the cooked pasta, the blend is light and clean, without the heaviness of bottled sauce. Serve with a green salad for a great summer meal.
