If you made a New Year’s resolution to eat more healthfully, but you’re craving something sweet, don’t worry – we’ve got the perfect heart-healthy chocolate mousse recipe for you and your sugar tooth.
Serves 6.
Ingredients:
- 2 oz. dark, unsweetened chocolate
- 3 T. brown sugar
- 4 T. raspberry preserves, coffee or orange liqueur
- 1 (12-oz.) ctn. fat-free light whipped topping
- 1/2 c. crushed graham crackers
- 1 T. sugar
- 1 T. soft margarine
- Berries or chopped nuts for garnish
Preparation:
Combine chocolate and brown sugar in a small bowl. Heat mixture in a microwave for 1 minute until chocolate is smooth and glossy. If necessary, heat for a few additional seconds. (Be careful because chocolate can burn easily.) Stir in preserves, coffee or orange liqueur. Cool in refrigerator for a few minutes. Add chocolate mixture into whipped topping. Add sugar and margarine to graham crackers, mixing it with fingers to blend. Add 1 teaspoon of crumb mixture in bottom of parfait glass. Follow with 3-4 tablespoons of mousse mixture; repeat layers.
