Heart-Healthy Recipe: Creamy Corn Casserole

Serves 4


  • 1 T. margarine
  • 2 T. all-purpose flour
  • 8 oz. evaporated skim milk
  • 2 c. canned or frozen corn
  • Salt and pepper to taste


Preheat oven to 350 degrees. Melt margarine in a 9-inch pie pan or ovenproof, glass pie plate. Blend in flour, stirring with a wooden spoon. Stir in milk, corn, salt and pepper. Bake until creamy and thick, stirring occasionally, about 20-30 minutes. Serve immediately.
