The holidays and sweet treats go hand in hand, as anyone who’s ever struggled to button her pants on Jan. 1 knows all too well. But it is possible to enjoy holiday indulgences in moderation. This chocolate cake and pudding sauce has just 232 calories a serving — darn good for a rich dessert — and will delight party guests.
1½ cups all-purpose flour
½ cup sugar
¼ cup unsweetened cocoa
¼ cup brown sugar
1 teaspoon baking soda
½ teaspoon salt
½ cup skim milk
1/3 cup water
3 tablespoons vegetable oil
¼ cup chocolate chips
1 tablespoon vanilla
Combine flour, sugar, cocoa, brown sugar, baking soda and salt in medium-sized mixing bowl. Make a well in center of mixture. Combine milk, water, oil, chocolate chips and vanilla. Add to dry ingredients, stirring only until dry ingredients are blended. Lightly coat a 9-inch cake pan with vegetable oil spray. Spoon batter into pan. Bake at 350 degrees for 25 minutes or until toothpick inserted in center comes out clean. Top with chocolate pudding sauce.
Chocolate pudding sauce:
1 small package chocolate pudding mix, cook and serve (fat-free and sugar-free mixes work well)
2 cups skim milk
¼ cup fat-free evaporated milk or fat-free half-and-half
3 tablespoons chocolate chips
Using pudding and skim milk, follow directions on package for pudding, adding fat-free evaporated milk or half-and-half and chocolate chips during cooking. Spoon warm pudding sauce over cake.
