At only 2 grams of fat and 160 calories per serving, this minestrone soup is “skinny” and flavorful. A little slicing and dicing of ingredients (plus use of some canned vegetables) into a four-quart kettle will yield this great soup in no time at all. If you have fresh herbs on hand, that’s all the better.
Minestrone Soup
Ingredients:
2 boneless, skinless chicken breasts, cooked and diced
1 oz. lean ham
6 cups chicken broth, fat removed
1 16-ounce can diced tomatoes
1 16-ounce can green beans
1 cup sliced carrots
1 cup sliced zucchini
1 cup dry elbow macaroni
1 tbsp. chopped onion
2 tbsp. dried parsley
1 tbsp. chopped garlic
1 tsp. dried basil
½ tsp. dried oregano
1 small bay leaf
¼ tsp. pepper
Preparation:
Combine all ingredients in a four-quart kettle and simmer until vegetables are tender (particularly the carrots).
